Beef and Mushroom Pie

I’ve been having fun since I discovered the gluten free pastry in our supermarket recently. So here’s another one for a delicious homemade meat pie. HINT This recipe contains one of my favored ingredients –lentils. Lentils are almost undetectable when added to soups, stews and casseroles as they will absorb the flavor of other ingredients, while still being are a great source of fiber and protein that contain little fat. There is no need to cook the lentils in this dish beforehand. Simply rinse them and pick out any lentils that are discolored. ONE NOTE OF CAUTION Do not get … Continue reading

Sharing Your Story

Sometimes we hear of people and they speak of their lives and we can think, ‘Wow! I never had anything like that experience.’ We even find it with some of God’s chosen ones like Paul. Paul related his conversion experience to a crowd in Acts 22. If you know the story of Paul, and what happened on the road to Damascus, you might be thinking that’s fine for him but I never had a dramatic conversion experience at all. What I have to say couldn’t be interesting to anyone. Don’t be too sure. One time a young woman was feeling … Continue reading

Save Money—-Make Your Own Chinese Restaurant-Style Dishes

I love getting Chinese take-out, especially on Friday nights. Unfortunately, with the economy (and my family budget) in flux, Chinese food has tumbled to the bottom of the priority list. The fact that it cost nearly $40 to feed a family a four (two main dishes and two sides) means I probably won’t be visiting my favorite Chinese eatery for a while. If you love Chinese food as much as I do, but you don’t have the cash to feed your habit, consider making your own. There are dozens of Chinese dishes that can be made in less than an … Continue reading

Are You Being a Mushroom?

We just picked our first home grown mushrooms. It fascinates me the way they grow in the dark. People aren’t meant to be like mushrooms and kept in the dark. Yet often that’s what some of us try and do with our Christian faith. Nicodemus tried to do this at first too, which is why this Pharisee came to Jesus by night. Although he recognized Jesus had come from God and that God was with Jesus, which was more than some of the other Pharisees did, Nicodemus still didn’t want anyone else to know he came to see Jesus, John … Continue reading

Portabello Mushroom Stroganoff

Stroganoff is a traditional Russian dish that simply includes beef and sour cream. I know that I always add onions and mushrooms to my stroganoff but this is not part of the original recipe. Traditionally, the dish is served with potato straws (considered a traditional garnish in Russia) and includes a little tomato paste and mustard. The version that most of us are familiar with would more appropriately be called “American Stroganoff.” Here is a great vegetarian dish that a friend sent to me. Going vegetarian with a stroganoff is a great way to lighten the dish up since it … Continue reading

How to Select Mushrooms

Want to know how to select the best mushrooms? It is easy to do. Just follow some simple tips. Have you ever been to New Jersey? It is called the Garden State for good reason. I know, I know, you may not think of gardening when you think of New Jersey. I can relate. I grew up in New York City and got to experience the whole garbage barge debate. (There was a garbage barge that kept sailing across the river from NJ to NY and back again. Neither state wanted to claim it, and it led to some good … Continue reading

Impress Your Guests with Stuffed Chicken Cutlets

When we were first married, we used to love those frozen Barber foods stuffed chickens. In fact, I think we even served them to guests once, being proud of ourselves for being so ‘elegant.’ (What can I say? I was 22 when I got married.) But now we’re all grown up and when we really want to impress our guests we can make the real deal. Really, you can get very creative in the kitchen and stuff your chicken with anything. Mashed potatoes, rice and vegetables, or even stuffing all make good things to make stuffed chicken cutlets with. Below … Continue reading
